Is a holiday party complete without a luscious platter of delicious cheese?  Cheese is one of our passions at Orchard Kitchen, and in this class you will learn all you need to know to begin exploring the world of cheese with a solid footing.  You will learn how different types of cheese are made, as well as a bit about their history. You will learn the different types of cheese, from soft, fresh cheeses to stinky washed rind cheese to aged tomes like Gouda and Pecorino.  How does the type of milk - sheep, cow or goat - affect the final product? How should you think about creating a selection of cheeses for a cheese plate? How can you tell when soft ripened cheese are ready to consume, or past their prime?  Oh, and we will create several accompaniments for different types of cheese and eat a good amount of the fermented curd.
