Rogue Smokey Blue Gnocchi Sauce
Ingredients (for 6 servings)
2 Cups Dry White Wine (such as Sauvignon Blanc)
2 Tbs Rice Wine Vinegar
1 Medium Shallot, Finely Chopped
2 Bay Leaves
8 White Peppercorns
2 Cups Heavy Cream
Salt and White Pepper to taste
6 Portions of Gnocchi (approx.60 pieces)
8 Ounces Rouge Smokey Bleu Cheese
½ Cup Coarsely Chopped Hazelnuts
Directions
In a medium saucepan combine wine, vinegar, shallots, bay leaf and peppercorns.
Over medium high flame, reduce the contents until only 1 Tbs remains.
Add the cream. Reduce by half. Strain. Place back into pan.
Crumble cheese. Reserve ¼ of blue cheese, add the rest into the sauce. Whisk until smooth.
Adjust the seasoning with salt and white pepper.
Boil gnocchi in salted water until they float. Once they float, remove from water.
Add to the sauce and gently stir in.
Divide between 6 heated plates.
Garnish with the reserved blue cheese and hazelnuts.
Pair with a light, bright red wine like a Gamay.
